"JC" Stevens

Jon-Claude (JC) Stevens is the baker/chef and the driving force behind
a little enterprise called JC's Daily Bread, Gourmet Bakery &
Café in Port St Lucie, Florida. Those of you who have been
attending the Riverside Arts Market cannot have missed him, his
infectuous personality, and the great variety of awesome inspiring
breads and pastries he brings to Jacksonville every week.
After growing up overseas in a Foreign Service family where he learned
a greater appreciation of fine-dining and world cuisines, JC attended
the Culinary Institute of America in Hyde Park, NY. Upon
graduation, he worked several years as a chef and baker for Club Med in
West Africa, the Bahamas, Florida, and Colorado. He was named
Club Med’s best baker world-wide two years in a row through customer
satisfaction surveys. Five years ago, he decided he wanted to
begin creating his own gourmet delights and quit Club Med to start his
long-term dream of a business of his own. His credo is that great
food is for everyone, not just a select few. He created his
breads and pastries to meet that goal.
JC’s recent discovery
of up-scale Farmer's Markets in general and the
Riverside Arts Market in particular has been a real a plus he had not
anticipated. His eclectic variety of breads has taken the markets
by storm. His butterscotch loaf seems to have its own fan club,
as do his Italian Medley and "Ode to Hippie" offerings. His
baguettes and croissants are trips back to France for those who know
the difference. In short, his stuff does not disappoint.
Each loaf of bread that JC brings to the
Riverside Arts Market each Saturday has an amazing provenance. JC
starts baking bread for RAM at 5:00 p.m. each Friday afternoon at his
bakery in Port St. Lucie. By 4:00 a.m. in the morning he is finished
baking hundreds of loaves, which he carefully packs in his van and
trailer, and then he sets out in the middle of the night on
Interstate-95 north for the 3 1/2 hour, 240-mile drive to Jacksonville.
He arrives by 8:00 a.m., unloads his trailer at RAM, and is ready when
his first customers start arriving well before the 10:00 opening of the
market. By the end of the market day, he is ready to pack up his empty
bread crates and get some sleep in his van while a family member drives
him home to Port St. Lucie.
JC Makes over 30 different types of gourmet bread and pastries to bring
to the market each week, and his baker's art is a major draw to bring
